What Have I Gotten Myself Into?

The very second that Luke told me to book my birthday trip to Maui, I went out and bought a book and began doing all the research I could about it. I mean, there are certain things you just have to know, before you go anywhere.
What hotel to stay at, what hotel not to stay at
What to do, what's not worth the time
And of course, the best beaches
As I'm reading through the "Adventure" section of the Maui book, I turn to Luke and say" look at this, they have zip lines." I really didn't think he was listening and I certainly didn't think he had any intentions of taking it seriously. It was just a side note. Anyway, he comes home the next day and says that the zip line is his pick of things to do when we go. "OMG! Are you Serious!?"
We are now booked for an insane 4 hour tour of zip lines.
Note to self - plan your fluids, wear pants, and don't forget the Dramamine

Happy Anniversary!

WOW! I really had no idea when I was walking down the isle that all of this would happen.
Year 1: Had no idea how to cook. Pretty sure I never even used the oven in our apartment.
Year 2: Luke joins the Air Force, have a baby, and moved to Germany - us crazy kids!
Year 3: What a rough year
Year 4: Had another baby, Bethany. Now two kids, in Germany, 4th floor apartment, lousy paychecks, can't wait to come home...
Year 5: Yeah....Coming Home, now sights set on a house of our very own
Year 6: We get Cody!!! Moved into a new house, life is sooo good.
Year 7: Disneyworld...first family vacation (too fun!)
Year 8: Move to Meeker and a house that was ridiculously primative, I'm surprised it had plumbing
Year 9: We have a new baby, Dulcey.
Year 10: We move back to Grand Junction (sigh of relief) Luke and I get to have our own bedroom again
Year 11: Well, we thought we got to have our own bedroom, baby number five, Anna-Claire graces us with her presence
Year 12: Disneyland with all five kids, watch the kids get a little older, go on a few dates
Lord, please be with us through the next year, may it be blessed and full of your love. Thank You for everything you've given us and all the little things. AMEN!

What is his occupation? Plumber
What's your biggest Pet Peeve about this person? his perfectionism, it's very OCD
Name something that nobody really knows about him except you: no
Where did you meet? My youth group took a weekend trip to Denver and I sat next to him on the bus
What was the first thought that went through your head when you met? not a chance
Do you remember what he/she was wearing? some kind of t-shirt, shorts, and a ball cap
Where was the first time you kissed this person? At his parents' house, back porch (he forgot to set the emergency brake on his jeep and it began rolling into the neighbors yard- he had to chase it down)
Where did you go for your first date? officially as a couple, probably the movies
How long did you know this person before you became a couple? around 6 month
Has this person ever proposed to you? yes
Do you and this person have kids together? 5 who woulda thought
Have you ever broken the law with this person? I don't think so
When was the first time you realized that you liked this person? immediately
Do you get along with his family? most of the time
Do you trust this person? I've never seen him lie..... and I've had to trek across town to go back to walmart because he realized the cashier forgot to charge us for asparagus.

Homeschool Prep Time

I know that summer finally just started, but as a homeschooling mom my thoughts are on the next school year.
First things first, I've gotten out my BJU curriculum catalog and begun figuring out what I'm going to need, what I want,and then what I can actually afford.
This is my list...yikes!

Chicken Parmesan
As promised, here is a fabulous recipe I got online a while back.
Ingredients:
Chicken Breast
Salt
3 cups of bread crumbs
5 eggs
2tbs milk
combination of vegetable and olive oil
marinara sauce
parmesan and mozzerella cheese
oregano, thyme, pepper (a pinch- more or less)
Directions:
*I usually create of station with three bowls. One with flour, next one with eggs and milk, and last one with bread crumbs (including salt and spices).
*Preheat oven to 400 degrees
*Heat a large skillet on medium with oil.
*Pound chicken flat - coat with flour, then eggs, then bread crumbs, add to skillet until golden crispy
*Pour half of the marinara sounce into a large pan. Once the chicken is golden, place the chicken in the pan. Add the rest of the maranara sauce over the chicken...top with cheese.
*bake for 25-30 minutes
I love serving this over spagetti with garlic bread. A good wine to go with it is Australian Shiraz (any brand).
